Honestly Good Banana Bread

There was no flour in the stores.. because COVID. So I had impulse bought a bunch of gluten free flours. One being Bob‘s Red Mill grain free paleo making flour. Then I made banana bread, AND it was/ is delicious.


  • 3 ripe bananas

  • 4 tbsp avocado oil

  • 1 egg

  • 1 tsp apple cider vinegar

  • Approx. 1 cup of oat milk - add this last, see how wet your mixture is - is depends on what flour you use. Should have pourable consistency.

  • 2 c grain free flour

  • 1/2 c sugar

  • 1 tsp Baking soda

  • 1/2 tsp allspice

  • 1/2 tsp nutmeg

  • 1/4 c walnuts - any nuts you want to use here is great!

  • opt. 1/2 dark chocolate bar chopped up


Method

  1. In a medium bowl smash the bananas thoroughly -- little chunks are ok.

  2. To the bowl with the banana, add the rest of the wet ingredients: oil, egg, apple cider vinegar. Stir to combine. 

  3. In a separate mixing bowl combine the dry ingredients: gluten free flour, sugar, baking soda, spices, 1/4 cup pecans and chocolate. Stir together.

  4. Pour the wet ingredients into the dry ingredients and stir everything together until smooth.

  5. Pour into a parchment lined loaf pan (important to line with parchment in order to get it out of the pan!). Smooth out the top of the loaf with a spatula.

  6. Bake at 350f for 40-60 mins. Cool before slicing and serving. Enjoy!
