Granola

I am a huge fan of overnight oats - like a HUGE fan. I can eat the same overnight oats every day for month. Well I finally got sick of it and need to change it up - so this is what I came up with. This recipe is a 'create your own adventure' recipe - so many yummy variations! So full of delicious crunch - texture - and full of fiber and healthy fats! I add mine to yogurt a lot - or as seen here with milk of choice.



Ingredients:

- 3 cups of rolled oats

- Between 1/2c and 1 cup of each ... walnuts, pumpkin seeds, chia seeds, hemp seeds. Add in whatever you have! Almonds? Sesame seeds would be delish!

- 1/2 cup dried cranberries - raisins work too!

- 3/4 cup melted coconut oil - you could also use butter, avocado oil or any fat that can handle baking at 350 deg

- 1/2c ish of maple syrup - honey would work here too!


Heat oven to 350 deg - Mix all ingredients in a big bowl - then spread out mixture on a cookie sheet - bake for 20-30m or until golden brown.
