In addition to an addiction to sourdough, I also can't stop making curry. It's just so yummy and filling (esp on days where I am moving ALL DAY) the healthy fats and tons of fiber keep me full all day! Making the homemade naan was a extra special treat!
WHAT YOU NEED...
1 large white onion
2 cans of garbanzo beans
2 cans of coconut milk
2 T curry powder
1 T ish each of minced garlic and ginger (or use powdered)

WHAT TO DO...
Crank that oven up to 400 deg! Dice eggplant and onion into 1-2 inch pieces. Coat generously with olive oil and salt. Roast til the veggies are caramelized, stiring occasionally .
Mix roasted veggies with all other ingredients and simmer for 5 ish min - TADA! DONE! Serve on rice and or naan! Enjoy!
