Egg Roll in a Bowl

I keep buying 2 BIG cabbages when I go for my weekly grocery store visit - which is WAY too much unless I make sauerkraut. Well this week I didn't make sauerkraut because I now have 2 GIANT jars of it in my fridge. Someone tell me to stop fermenting. So this recipe was to use up my cabbage. It's amazing, easy and healthy! I topped my egg roll in a bowl with homemade kimchee (recipe below). This would be great over rice too.

Egg Roll in a Bowl


- 1 T of olive oil, or avocado oil

- 1 lb of ground chicken or turkey or even pork (maybe a mix!) - you could even use tempe or tofu here for the vegetarian/vegans

- 1 onion diced

- 1 t of minced ginger

- 3 cloves of garlic minced

- 5 cups - ish of shredded cabbage - I used green but purple or a mix would be great!

- 1 cup shredded carrot

- 2 T soy sauce

- 2 T rice vinegar

- 1 T sesame oil

- toasted sesame seeds (optional)

- green onions (optional)

Instructions ...

1. In a large saute pan over medium heat drizzle 1 tablespoon olive oil and onion, ginger and garlic. Cook til lightly golden, then add ground turkey. Cook for 5-6 minutes, or until turkey is cooked through.

2. Set turkey mixture aside

3. In the large pan add cabbage, shredded carrots, soy sauce, and the rest of the ingredients. Stir well and cook til veggies are limp, then add in meat mixture. Cook til veggies are to your liking.

4. Just before serving add green onions , kimchee or/and toasted sesame seeds. Serve over regular rice, cauliflower rice, or eat it in a bowl by itself.

I didn't have red pepper powder so I make mine without - and it's amazing! It's not as pretty, but, oh well.
