Curry in a Hurry
What to do with all those 'getting kinda old' veggies in your fridge? Make curry! So full of fiber and good fat. This curry has an amazing aroma and awesome texture. Healthy, filling and tastes good? Say yes.
1 yellow onion
1 pepper (red yellow or green)
Any other veggies you have hanging around in your fridge that need to be eaten
2 cloves garlic minced
2 teaspoons ginger minced or powdered
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
15 ounces crushed tomatoes
1 cup fat free plain yogurt or 15 oz can or coconut milk
Here's why this is so easy. Chop all your veggies and coat with a lil olive or avocado oil, salt and all the seasonings. Roast at 425 deg until caramelized and delicious looking - veggies should be tender.
Then in a bowl mix the rest of the ingredients together - boom done. Enjoy!
