Chia Seed Berry Jam
I love a PB&J. It's a total comfort food for me. I especially love this delicious jam with chia seeds - has awesome flavor and texture. Full of goodness - essential fatty acids, fiber, antioxidants and most importantly - FLAVOR. It's also low carb, low sugar
500g/1.1lbs Frozen Fruit
1/4 Cup Chia Seeds
Sweetener of your choice (I used about 1/4c of maple syrup, but you could use stevia or sugar) - Just sweeten to your liking.
Place the frozen fruit into a small saucepan over medium heat.
Heat slowly and stir regularly to help the fruit to soften.
Cook until bubbling and all of the fruit is easily mashable.
Remove from the heat and either mash with a potato masher or allow to cool and puree in a blender or food processor until smooth to your liking.
Mix in sweetener, taste that it’s sweet enough and add more until sweet to your liking.
Stir through the chia seeds, ensuring they are fully incorporated.
Allow to cool to room temperature and then pour into a jar.
Move the chia seed jam to the fridge, store for up to a week and enjoy.
