A Sauce Made From Plants
I may be super late to the sauce game but I just discovered romesco sauce - then I created my own version of it because these were just the ingredients I had in my fridge - and I am trying to avoid going to the grocery store (COVID).
For this meal I made lentil pasta - yes, it's pasta made with just lentils - and it's amazing. Chicken sausage and arugula.

Ingredients ...
- 5-6 med/big carrots
- 1.5 cups of roasted almonds (I like to buy raw then soak overnight, then roast with some sea salt!)
- 1 onion
- garlic
- 1/2 c mammas hot little peppers
- 1/3 c of the juice from the peppers
- 1/3 cup of olive oil
- 1/3 cup water - potentially more
- salt and pepper to tast
What to do ...
Set the oven to 425 deg
In a big bowl combine diced onion, garlic and carrots and toss with olive oil salt and pepper.
Roast for 20-30 min or until nice and caramelized (see crispy brown sides).
In a blender (I used Vitamix) or food processors - add in the rest of the ingredients.
Now add in more liquid to get the sauce like consistency - you can do this with water, liquid from pepper or olive oil.
